Preheat oven to 180°C
Line an 8×8 inch baking pan with parchment paper, allowing some overhang so the bars can be lifted out easily after baking.
In a large bowl, combine the cookie layer dry ingredients. Mix until combined.
Add the egg and vanilla extract and stir until a soft dough forms.
Fold in the chocolate chips.
Spoon about ⅔ of the cookie dough into the bottom of the prepared baking pan.
Using slightly wet fingers or the back of a spoon, press and spread the dough evenly across the base.
In another bowl combine the Brownie dry ingredients
Add the melted butter and egg and stir until a thick brownie batter forms.
Fold in the chocolate chips.
Spoon the brownie batter evenly over the cookie layer.
Use the back of a spoon or wet fingers to spread it smoothly across the pan.
Take the remaining ⅓ of the cookie dough and distribute small pieces randomly over the top of the brownie layer. Leaving some brownie visible creates a beautiful marbled effect.
Bake for 25–30 minutes, or until the edges are set and the centre is slightly soft.
